OMAKASE

Omakase (Japanese: お任せ) is a unique dining experience based on complete trust in the chef. The word *omakase* literally means “I leave it up to you” – in a culinary context, it means the guest entrusts the choice of dishes to the chef, who creates a personalized, often seasonal and improvised menu tailored to the mood of the day, available ingredients, and their own culinary vision.

Key principles of omakase:

Trust and connection with the chef – The guest sits at the bar, where they have direct contact with the chef. It is an intimate, almost ceremonial experience – the chef serves consecutive dishes, talks about them, observes the guest’s reactions, and often adjusts the flow of the dinner on the spot.

Seasonality and product quality – Omakase is a tribute to the freshness and perfection of ingredients. The dishes often feature rare fish, seafood, seasonal vegetables, and local delicacies, frequently imported directly from Japan.

Skill and minimalism – Omakase dishes highlight the chef’s technical mastery. There is no room for excess – every element has a purpose both in taste and presentation. The set can range from a few to a dozen (or even several dozen) items.
