SEBASTIAN LULIS – a passionate enthusiast of Asian cuisine and the art of sushi, with over 20 years of experience in the culinary world

He started from the ground up and gradually became a head chef in renowned venues across Poland, Switzerland, Spain, and the Caribbean. His portfolio includes collaborations with prestigious places such as Nikki Beach, SEN Warsaw, and HATO and Grace La Margna in St. Moritz.

He loves to experiment with flavors, blending tradition with modernity, and crafting dishes that impress both visually and on the palate.

His career path is an impressive journey — from working in local restaurants in Warsaw to leading the kitchens of high-end international culinary concepts in Switzerland, Spain, and the Caribbean. He is not only a seasoned practitioner but also a leader and mentor capable of building and guiding a kitchen team, developing cohesive culinary concepts, and maintaining the highest standards of quality.

He has worked in exclusive seasonal locations, where he was responsible for implementing and maintaining the high standards of international service and fine dining cuisine.

What sets him apart? Vast experience, a natural sense of taste and aesthetics, creativity, and an effortless ease that he knows how to combine with full professionalism. He holds certifications from the All Japan Sushi Association, reached the finals of the nationwide Global Sushi Challenge 2015, opened or reorganized over a dozen restaurants, trained hundreds of chefs, and delighted thousands of guests. At LUMA, he is responsible for the culinary side of the restaurant and has created his own concept inspired by Nikkei cuisine – a unique fusion of Japanese and Peruvian flavors. He is the author of the entire menu philosophy, selects ingredients, takes care of details and dish quality, and oversees the kitchen’s work from A to Z. This is a project where he can fully showcase his creativity, experience, and culinary vision.
